Pado: The Ultimate Aged Sashimi (Sukseong-hoe) Spot in Jeonpo, Busan

If you are a fan of seafood, you absolutely cannot miss Pado (파도) in the trendy Jeonpo neighborhood of Seomyeon. This restaurant specializes in Aged Sashimi (Sukseong-hoe), which is known for its deep umami and incredible tenderness.

Unlike fresh sashimi, which is served immediately after the fish is caught, aged sashimi undergoes a careful aging process to maximize its flavor and create a soft, melt-in-your-mouth texture.

What I Ordered: The Assorted Platter (Small)

I ordered the Small Assorted Platter (모듬 한 상 소), and honestly, can you believe this is just the “small” size? The portion is incredibly generous!

My friend and I paired it with a bottle of Cheong-ha (a clean Korean rice wine), which was the perfect companion for the rich sashimi. Every side dish was also impressive—the Corn Cheese Mayo was addictive, and the Kimchi Udon that came with it was savory and comforting.

Booking Tips: Avoid the Long Lines

Pado is extremely popular, and if you visit during the weekend, you will almost certainly face a long wait. To save time, I highly recommend booking in advance.

  • Catch Table App: You can check the real-time waiting status or book through the app.
  • On-site Registration: If digital booking is difficult, you can always visit the shop early to put your name on the list at the kiosk in front.

If possible, visiting on a weekday is the best way to enjoy a more relaxed atmosphere!
